Bone marrow on toast?

Damn right! I’ve made it myself a couple of times, but you really need to eat it at St. John, the offal restaurant in London. The texture of marrow just scraped out of a roasting hot piece of bone is remarkable, and something even more remarkable happens when it interacts with the special salt they serve it with.
